Ingredients for Squid and potatoes Praianese style
🔹 1 kg fresh squid (Remember that when making squid and potatoes Praianese style, freshness of the ingredients is everything!)
🔹 500 gr potatoes
🔹 1 glass white wine
🔹 250 g cherry tomatoes
🔹 1 clove of garlic
🔹 plenty of oil, salt, pepper or chilli pepper, parsley
🔹 bread croutons
Preparation
The first step is to clean the squid properly and cut into rounds of about 2 cm. Do the same with the potatoes, which should be cut into small chunks.
Grease a pan with oil and add the chopped garlic and as soon as it has browned, immediately add the squid and potatoes. After stirring the ingredients well, when they turn golden brown, add the white wine.
Once the wine has all evaporated, add the cherry tomatoes cut at least in half, the best would be the ‘datterini’. All that remains now is to add salt and a handful of parsley, stirring and cooking over a low flame for a couple of minutes.
All in all the cooking should take about twenty minutes, obviously if the mixture is drying out you will need to pour in some water, this will be necessary until it is completely cooked.
The time may vary, so to be sure the dish is ready, all you have to do is taste it. To add further flavour, add a sprinkle of pepper or chilli and colour with some bread croutons.
